So with Christmas day like tomorrow, here’s a quick recipe if you haven’t decided what to contribute to Christmas lunch. Or if you just want to make a batch for the week or eat them all yourself in one sitting (No judgment, they are highly addictive).
So here you go for something that looks super impressive but was super easy to put together.
Also feel free to change up the ingredients I used whatever I had on hand.
INGREDIENTS
⁃ 1 cup nut meal of choice (I used a combo of almond, walnut and cashews, ground in a blender)
⁃ 2 tsp raw cacao powder
⁃ 2 tsp açai powder
⁃ 2 tsp lacuma powder
⁃ 1/2 cup dates
⁃ 2 tbsp chia seeds
⁃ 1/4 cup hot water
⁃ I tbsp peanut butter
– desiccated coconut to coat
METHOD
⁃ add the dates, hot water, chia seeds to a bowl and soak for 10 -15 minutes.
⁃ Mean while add the nut meal, lacuma, açai and cacao to a separate bowl and mix.
⁃ Add the date mixture and peanut butter to a blender and blend until almost smooth.
⁃ Add wet ingredients to the dry ingredients and mix until it forms a dough.
⁃ Shape into balls and roll in coconut.
Plate up and Enjoy!!!
